Summary
Fast-changing consumer behaviour with respect to foods, global trading in foodstuffs, along with increasingly demanding consumer requirements mean that operators, producers and distributors are now finding themselves in new situations involving new techniques such as the HACCP method. This article examines evolution in terms of food hygiene and discusses several serious issues, including mad cow disease and listeriosis, for which the necessity to obtain positive results, and not just to implement methods, is made clear to stakeholders who end up in court following n cas de défaillances plus ou moins liées aux pratiques de flux tendus de la grande distribution.
