Summary

STUDY OF THE EFFECT ON THE RESIDUAL NITRITE AND NITRATE CONTENTS OF FREEZING AND LONG-TERM FROZEN STORAGE OF SCALDED HAMS, WRAPPED IN PARCHMENT AND STORED UNDER VACUUM IN PA20/PE70 LAMINATE BAGS. AS FROZEN STORAGE CONTINUES THE RESIDUAL NITRITE LEVEL DROPS WHILST THE NITRATE LEVEL RISES. THE WRAPPING MATERIAL AND METHOD OF PACKAGING DID NOT SIGNIFICANTLY INFLUENCE THE DYNAMICS OF THE NITRITE PATTERN DURING THE LONG-TERM STORAGE OF COOKED HAMS.
