Summary

The addition of 4.4 % of freeze-dried meat to the meat paste going into a pig salami with a diameter of 75 mm makes it possible to accelerate maturation a little. Here, the phenomenon is studied, as well as the microbial development, the activity of water and the viability of the process compared with a more important salting process.
