THE PROBLEMS OF THE STORAGE OF FROZEN MEAT IN ROOMS EQUIPPED WITH ICE SCREENS AND THE EFFECT OF THESE SCREENS ON THE INTENSITY OF HEAT INPUTS ARE DISCUSSED. THE SHRINKAGE DUE TO THE LOSS OF WATER, THE CHANGES IN PROTEIN FRACTIONS AND TOTAL PROTEIN, THE CHANGES IN TISSUE FAT AND WATER HOLDING CAPACITY ARE STUDIED.
