THE AUTHORS DETERMINED IN FROZEN FOODS THE COLIFORM AND FECAL E. COLI COUNTS USING A METHOD ENABLING THE REGENERATING OF DAMAGED CELLS. THEY SHOWED THAT, ON AN AVERAGE, ABOUT 40% COLIFORMS AND 45% FECAL E. COLI ON THE PRODUCTS STUDIED CANNOT DEVELOP IN THE CASE OF DIRECT INOCULATION IN A SUITABLE MEDIUM. IN THE CASE OF FROZEN FOODS STORED FOR A LONG TIME, AN EXACT MICROBIAL EVALUATION SHOWING ACTUAL SANITARY CONDITIONS IS CRITICAL.
