Summary

RATE OF FORMALDEHYDE BIOSYNTHESIS IN MEAT STORED IN ICE 0, 1 AND 10 DAYS AND IN THE LAYERS AT VARIOUS DEPTHS (0, 4, 8, 12 AND 24 MILLIMETRES) OF MUSCLE STORED AT 263 K (-10 DEG C). THE RESULTS SHOW THAT THE FORMATION OF FORMALDEHYDE ON MUSCLE SURFACE MAY BE INHIBITED BY OXYGEN. (Bibliogr. int. CDIUPA-CNRS, FR., 83-210-7568.
