Summary

CUCUMBERS WERE STORED AT DIFFERENT LOW TEMPERATURES, AND AFTER A PERIOD OF STORAGE, TEMPERATURES WERE ELEVATED AND INDUCED DECAYS OF CUCUMBERS WERE MEASURED. WHEN STORED AT A TEMPERATURE BELOW 284 K (11 DEG C), THE INCREASE OF THE PERMEABILITY OF ITS CELLULAR MEMBRANE WAS EVIDENT, BUT THE RAPIDITY AND ONSET OF THE TIME OF INCREASE VARIATED WITH THE LOCATION ON CUCUMBER. THE EXTRACT CONDUCTIVITY OF DISC TAKEN FROM THE FLOWER END OF THE CUCUMBER SHOWED AN EARLY AND RAPID INCREASE. AFTER VARIATION OF TEMPERATURE, CUCUMBER ALSO SHOWED THAT THE LOWER THE STORAGE TEMPERATURE, THE HIGHER THE INDEX OF DECAY AND SHORTER STORAGE LIFE. THE CRITICAL TEMPERATURE FOR CHILLING INJURY OF CUCUMBER IS 284 K AND 286 K (13 DEG C) IS THE SAFE TEMPERATURE FOR STORAGE.
