Development of a method based on the numerical calculation of the time-temperature profile, in the centre of solid particles. Heat-transfer coefficients are evaluated on the basis of these values and results provided by an integrator containing an immobilized peroxydase. Application to the optimization of thermal sterilization of particle products.
