Summary

Description of the design, installation and experimentation of a system for controlling the quality of fresh products, consisting of fitting a time-temperature indicator, called a "freshness chip" by the French supplier. This indicator is a plasticized sticky label whose colour changes as a function of time and temperature, in an analogue way to indicate ageing of fresh products. An explanation is given how this system ensures quality in the cold chain and how it provides consumers with an extra service. The products concerned are mentioned in an appendix (dairy products, delicatessen, meat, poultry, fresh salads, smoked fish, fresh prepared food). J.R.
