Storage tests of ground meat nitrogen-packaged with oxygen scavengers (FreshPak 200R). These scavengers were investigated as a function of the residual oxygen concentration of the atmospheres. According to the storage temperature, the efficiency for colour stabilization of ground meat was assessed.
