THERMAL PROPERTIES OF PACKAGED LAYERS OF FRUIT IN BULK PRESENT AN IMPORTANT BASIS FOR CALCULATING AND DESIGNING REFRIGERATING PROCESSES AND EQUIPMENT. A METHODOLOGY HAS BEEN WORKED OUT AND A DETERMINATION IS GIVEN OF THE SPECIFIC HEAT CAPACITY, THE COEFFICIENT OF THERMAL CONDUCTIVITY AND THERMAL DIFFUSIVITY OF PACKAGED LAYERS OF FRUIT (PUT IN CRATES). THE INFLUENCE OF THE COOLING AIR INFILTRATION ON THESE COEFFICIENTS HAS BEEN DEFINED.
