Thermophysical properties of dried figs for freezing.

Summary

Freezing dried figs can be a more hygienic solution than methyl bromide fumigation for destroying insects. Some data related to this issue are detailed in the study. Thermal properties of dry figs have been determined by calculation (referring to general literature related to food products) and experimentation (mass heat, thermal conductivity, thermal diffusion, freezing time). Core-dry figs cannot be frozen even at -28 deg C. Tests were conducted with figs, individually or packed in 500 gram bags.
