Time-temperature monitoring and quality inspection for quick-frozen food manufacturers: design factors.

Author(s) : SANDERSON-WALKER M.

Type of article: Article, IJR article

Summary

The consumption of branded quick frozen foods, sold by retail, has continued to increase significantly in the United Kingdom. The attention paid to quality assurance in the cold chain has resulted in improvements in stock control and temperature of transport, handling and storage, within the accepted guidelines of the time-temperature tolerance theory. The practical result has been an increase in consumer satisfaction despite the introduction of new products which are more temperature sensitive, and a greater
expansion in the use of food freezers in the home.
