Summary

Problems with the control of temperature in the links of frozen food chains, occur mostly during loading and distribution. An HACCP system or quality control is necessary to effect improvements. A datalogger, with its high resolution, response time, accuracy and variable sample intervals, can be used to advantage. The identification of "bottlenecks" and solutions to some of the problems are presented.
