Summary

Since the "mad cow's" disease outbreak began in Europe, there has been growing awareness of the importance of traceability. This traceability concept has also taken on importance in the cold chain. The importance of being able to follow both time and temperature factors throughout the life of a perishable product is now widely accepted. In the first part of the paper, the author explains expiry dates and dates of minimum durability. He then provides a list of various means used to monitor the temperature of a product over time (thermometers, temperature recorders, centralized systems, temperature indicators and integrators) and analyzes difficulties encountered in the control of the product temperatures. The third section of the author's paper is devoted to an analysis of the means of traceability of refrigeration. Afterwards he makes a survey of already available regulatory and standards tools.
