Transitions in frozen gelatinized-starch systems studied by differential scanning calorimetry.
Author(s) : LIU H., LELIEVRE J.
Type of article: Article
Summary
Characterization of thermal properties of samples containing from 10 to 70 % of polymers, and heated from -20 to 20 deg C at a rate of 2 deg/min. When the concentration in gelified polymer increases, interactions between water and polysaccharides inhibit freezing; no transition is detected.
