SMALL FILLETS AND FISH MEAT PIECES MAY NOT BE SUITABLE FOR SALE AND THEIR PROCESSING MAY BE UNECONOMICAL WITH STANDARD PROCEDURES. MACHINE REFORMING PROVIDES PORTIONS WITH A SIZE SUITABLE FOR SALE AT A LOW HANDLING AND PROCESSING COST. THE DESCRIBED REFORMING MACHINE IS USED FOR COMBINING A NUMBER OF FILLETS OR SMALL PIECES SO THAT THERE IS NO ADDITIONAL FRACTIONATION AND THE PRODUCT KEEPS ITS ORIGINAL TEXTURE TO A SATISFACTORY EXTENT. THE SCAMPI (NEPHROPS NORVEGICUS) MACHINE IS ESSENTIALLY USED FOR REFORMING SMALL PIECES OR BROKEN PIECES, BUT IS SUITABLE TOO FOR ALL SIZES OF MEAT WITH REAL SAVINGS ON THE HANDLING COST. BOTH MACHINES WERE DESIGNED FOR OPERATING WITH THE CONTINUOUS AIR BLAST FREEZER RECENTLY DEVELOPED BY THE TORRY RESEARCH LABORATORY.
