Summary

Food quality is of primary importance and regulatory organizations monitor the sanitary quality of our food supply and ensure compliance with the cold chain. The first article in this file focuses on the safety of the water used in the food industry. An article on the consequences of non-compliance with the cold chain on the appearance of fordborne diseases in collective contexts follows. In order to more precisely analyse the behaviour of bacteria exposed to cold and to predict their behaviour, two articles cover this theme: one describes the cold-adaptation strategies of psychrotrophic bacteria; the other presents a new system, soon to be operational, of assistance in expert appraisal of predictive microbiology used in the food industry.
