THIS PAPER REPORTS THE USE OF TOTAL VOLATILE BASIC NITROGEN IN THE DETERMINATION OF THE SHELF-LIFE OF UNIRRADIATED AND IRRADIATED (500 KRAD) HAKE FILLETS STORED AT 4-5 DEG C (277-278 K) AND ITS CORRELATION WITH ORGANOLEPTIC SCORES. THERE IS A TREND FOR THE BASIC NITROGEN INDEX TO INCREASE WITH TIME SPECIALLY AFTER 4 DAYS IN THE CONTROL AND AFTER 20 DAYS IN THE IRRADIATED SAMPLES. VOLATILE BASIC NITROGEN CONTENT AND LOSS IN ORGANOLEPTIC SCORES WERE FOUND TO CORRELATE AND THE VOLATILE BASE INDEX SEEMS TO PROVIDE A RELIABLE QUALITY INDEX FOR HAKE FILLETS.
