EVALUATION, BY MICROBIOLOGICAL, CHEMICAL AND SENSORY ANALYSES, OF THE STORAGE LIFE OF THESE PRODUCTS DIPPED IN SODIUM2EDTA SOLUTIONS (0.1 AND 1%) PRIOR TO STORAGE I THE EDTA TREATMENT CONTROLS MICROFLORA AND REDUCES TRIMETHYLAMINE AND VOLATILE NITROGEN CONTENTS BUT DOES NOT AFFECT THE LIPOLYSIS OF SARDINE AND MACKEREL: NO IMPROVEMENT OF STORAGE LIFE WAS OBTAINED.
