Summary

EVALUATION, BY MICROBIOLOGICAL, CHEMICAL AND SENSORY ANALYSES, OF THE STORAGE LIFE OF THESE PRODUCTS DIPPED IN SODIUM2EDTA SOLUTIONS (0.1 AND 1%) PRIOR TO STORAGE I THE EDTA TREATMENT CONTROLS MICROFLORA AND REDUCES TRIMETHYLAMINE AND VOLATILE NITROGEN CONTENTS BUT DOES NOT AFFECT THE LIPOLYSIS OF SARDINE AND MACKEREL: NO IMPROVEMENT OF STORAGE LIFE WAS OBTAINED. FOR PRAWN, IMMERSION IN A 1% SODIUM2EDTA SOLUTION EXTENDS STORAGE LIFE BY 8 DAYS BUT EDTA IS NOT COMPLETELY REMOVED AFTER 25 DAY STORAGE. (Bibliogr. int. CDIUPA-CNRS, FR., 86-210-218192.
