THE FOOD AND DRUG ADMINISTRATION WARNS CONSUMERS THAT PACKAGING CHILLED PREPARED FOODS UNDER MODIFIED ATMOSPHERE OR VACUUM MAY RESULT IN FOOD BEING ORGANOLEPTICALLY ACCEPTABLE, BUT PRODUCING FATAL TOXINS FROM CLOSTRIDIUM BOTULINUM. TEMPERATURES MUST BE BELOW 276 K (3 DEG C) TO PREVENT GROWTH AND TOXIN FORMATION. A PH ABOVE 4.6, WATER ACTIVITY ABOVE 0.93 AND TEMPERATURES ABOVE 276 K TOGETHER WITH AN ADEQUATE SUBSTRATE WILL PROMOTE GROWTH. SOME TRIALS WITH FOOD INOCULATED WITH C. BOTULINUM ARE REPORTED, IN MOST CASES THE SAMPLES WERE TOXIC AFTER A FEW DAYS AT ROOM TEMPERATURE. SALADS ARE ALSO A POTENTIAL HAZARD AND RECOMMENDATIONS ARE GIVEN FOR VACUUM PACKAGING OF FOOD IN RETAIL STORES. G.R.S.
