VOLATILE COMPOUND PROFILE OF FRESH HORSERADISH. SIX ISOTHIOCYANATES, TWO NITRILES, ONE ALLYLIC THIOCYANATE AND ONE CARBON DISULFIDE WERE IDENTIFIED. THEY ARE DISTRIBUTED BETWEEN THE ROOT AND AERIAL PARTS. THE DEHYDRATION AND FREEZE-DRYING OF ROOTS IMPROVE THE AROMATIC QUALITY OF DERIVATE HORSERADISH OIL. (Bibliogr. int.
