Summary

THE STATE DIAGRAM FOR AQUEOUS GALACTOSE WAS DETERMINED BY USING DIFFERENTIAL SCANNING CALORIMETRY. THE METASTABILITY OF THE AMORPHOUS PHASE WAS SHOWN BY THE STUDY OF THE RELAXATION ASSOCIATED WITH THE GLASS TRANSITION BUT ADDITIONAL INFORMATION IS NECESSARY TO CHARACTERIZE EXACTLY THE THERMAL EVENTS WHICH WERE OBSERVED IN THE GLASS TRANSITION REGION. THE METHODS CURRENTLY USED TO ESTIMATE THE AMOUNT OF UNFROZEN WATER CONTENT ARE DISCUSSED. THE MOST ACCURATE ONE PERMITTED CALCULATION OF THE HEAT OF FUSION OF WATER IN SUGAR SOLUTIONS, WHICH CAN BE VERY DIFFERENT FROM THAT OF PURE WATER AT 273 K (0 DEG C).
