This monograph is intended for students and engineers specialized in refrigerating, food and processing technologies, as well as in agricultural raw material and food storage and transport. It discusses theoretical and experimental studies on the thermal and physiological properties of fruits, vegetables and cereals. Among parameters investigated: transfer properties, losses of raw materials, respiration, and climatic, storage and humidity conditions.
