Summary

The technology of pulsed electric fields (PEF) allows a controlled electroporation on cell membranes, without any serious effect on the semi-rigid structure of the cell wall. This work quantifies the influence of a pretreatment by PEF an the freezing time and the freezing rate of various vegetables. The benefits at the levels of the freezing time and freezing rate were particularly marked for spinach (30% less freezing time and 40% faster freezing rate).
