Summary

The industrial drying of fruit paste is a delicate problem. The use of dry air at a moderate temperature (32 deg C) when performing this operation makes it possible to preserve the organoleptic characteristics of products, whereas drying using a higher temperature would cause deterioration of the product. For this reason, a dryer has been installed in the Vauvert factory.
