Summary

VARIOUS CULTIVARS WERE SAMPLED FROM A HOT AND A COOLER GROWING AREA AT TWO LEVELS OF MATURITY, IE GREEN AND RIPE. FRUIT WAS KEPT AT 283, 293 AND 303 K (10, 20 AND 30 DEG C) FOR 12 AND 48 HOURS AFTER PICKING AND PRECOOLED WITHIN 12 AND 48 HOURS TO 272.5 K (-0.5 DEG C). SUBSEQUENT STORAGE WAS 4 WEEKS AT 272.5 AND 275 K (2 DEG C) PLUS 7 DAYS RIPENING AT 283 K. MORE WOOLLINESS WAS FOUND IN GREEN FRUIT, WHEN THE DELAY IN COOLING WAS 12 HOURS RATHER THAN 24, WHEN FRUIT WAS COOLED FASTER. THE HIGHEST WOOLLINESS WAS FOUND IN FRUIT PICKED GREEN AND COOLED WITHIN 12 HOURS. THE EFFECT OF TEMPERATURE PRIOR TO COOLING WAS SIGNIFICANT AT 293 K AND ABOVE, AND 272.5 K WAS PREFERRED FOR STORAGE. GROWING AREA WAS A CONTRIBUTING FACTOR BUT THIS WAS NEGATED TO SOME EXTEND BY PICKING MATURITY. G.R.S.
