TO CONFORM TO PRESENT AND PROPOSED MEAT MARKETING REGULATIONS A MORE RAPID AND ACCURATE INDICATION OF TEMPERATURE IS REQUIRED THAN IS POSSIBLE WITH THE USUAL THERMOMETERS. THE AUTHORS DESCRIBE THE TECHNICAL ASPECTS OF DESIGN AND OPERATION OF A THERMOMETRIC DEVICE. IT INDICATES BY A RED OR GREEN LIGHT WHETHER THE TEMPERATURE AT A GIVEN POINT IN A MEAT MASS IS 0.2 K ABOVE OR BELOW A SPECIFIED VALUE. THE TIME OF RESPONSE FROM GREEN TO RED IS LESS THAN 30 SECONDS.
