THE AUTHOR GIVES A DEFINITION OF INDIVIDUAL QUICK FREEZING AND SHOWS THE SIGNIFICANCE OF MASS LOSS DURING FREEZING. SPECIAL ATTENTION IS GIVEN TO PRECOOLING, ACTING ON FREEZING TIME ; TEST METHODS OF PRECOOLING, WITH THEIR LIMITS AND APPLICATIONS, ARE DESCRIBED. FREEZING PROCESSES ARE CLASSIFIED ACCORDING AS THERE IS A CONVEYOR. THE FREEZERS WITH SUCH A CONVEYOR ARE GROUPED AFTER THE HEAT TRANSFER COEFFICIENT. FOR EACH CATEGORY OF FREEZER THE TECHNOLOGICAL CHARACTERISTICS AND LIMITS OF APPLICATION ARE GIVEN. A. M.
