Summary

THE AUTHOR DESCRIBES THE CONSTRUCTION OF CHILLS TO HIGH PHYSICAL AND HYGIENIC STANDARDS AND WITH A CONTROLLED CLIMATE USING CONCRETE SANDWICH ELEMENTS (SYSTEM OF HUONDER ENGINEERING AG -ZURICH). THIS SYSTEM CAUSES THE SURFACE TEMPERATURE OF MEAT TO DROP MORE QUICKLY AND THUS PERMITS GREATER RELATIVE AIR HUMIDITY IN THE CHILL WITHOUT THE RISK OF A MAJOR GROWTH OF BACTERIA BEING INCREASED. WEIGHT LOSSES FROM THE MEAT DUE TO EVAPORATION DURING THE CHILLING DOWN AND HOLDING PERIOD ARE KEPT WITHIN LIMITS.
