Summary

BATCHES OF RIPE APRICOTS WERE PLACED IN SEVERE HYPOXIA 2, 4, 8 DAYS AT 303 K (30 DEG C) AND 10 DAYS AT 288 K (15DEG C). BY ITS ANAEROBIC METABOLISM, THE FRUIT BECOME RAW MATERIALS WITH UNIQUE ORGANOLEPTIC CHARACTERISTICS. FROM THESE FRUIT, DOUBLY CONCENTRATED JUICES WERE EXTRACTED BY FREEZE-CONCENTRATION IN THE PRESENCE OF AN ADDITIVE AND WERE USED FOR THE PREPARATION OF A RANGE OF APRICOT SHERBETS. THE PRODUCTS OBTAINED HAVE EITHER A STRAW OR FERMENTATION OFF-FLAVOUR OR DIFFER BUT LITTLE FROM THE CONTROL SAMPLE.
