Summary
Basic problems of modified atmosphere application for extending the shelf life of food have been discussed in the paper. Special attention has been paid to characterization of gases and packages used by the food industry to modify the gas atmosphere within a packaging product as well as to utilization of oxygen absorbents and sous-vide technology.
