COMMERCIALLY AVAILABLE TIME-TEMPERATURE INDICATORS WERE USED IN A FROZEN FOOD STORAGE STUDY TO INVESTIGATE THEIR APPLICATION AS QUALITY CHANGE MONITORS. FROZEN STRAWBERRIES KEPT AT CONSTANT TEMPERATURES OF 261, 255 AND 238 K (-12, -18 AND -35 DEG C), AND AT A VARIABLE STORAGE TEMPERATURE, WERE EXAMINED AT 3-WEEK INTERVALS BY SENSORY AND OBJECTIVE ANALYSIS. IT WAS FOUND THAT THE INDICATORS EXAMINED SHOWED A STRONG CORRELATION WITH FIRMNESS AND ASCORBIC ACID CHANGE IN STRAWBERRIES HELD AT 261 K.
