Summary
Commercial samples of delicatessen salads were analysed for their microbiological quality with regard to the total counts of the aerobic mesophilic population, Enterobacteriaceae, lactic acid bacteria, yeasts and mould. In addition, the samples were studied for the presence of Listeria monocytogenes, Salmonella, and Staphylococcus aureus. No Salmonellae could be detected in any of the 282 samples analysed. On the other hand, Staphylococcus aureus was isolated from 7 (2.5%) samples and Listeria monocytogenes from 24 (8.5%) samples.
