Summary

A study has been made on the effect of self-wrapping plastic film, wax paper and silver foil on L. monocytogenes. In all contaminated samples, counts decreased during the initial 24 hours of storage in refrigeration, but from that moment on, in foods stored in self-wrapping plastic film and wax paper, the populations of L. monocytogenes were maintained. In the samples wrapped in silver foil, counts gradually decreased during storage for all the foods studied.
