THIS IS A DESCRIPTION OF REFRIGERATING EQUIPMENT DESIGNED SPECIFICALLY FOR WINE FACTORIES WHICH HAVE TO CONTROL THE VINIFICATION TEMPERATURE DURING THE VARIOUS STAGES OF THE PROCESS, NOTABLY DURING FERMENTATION IN VATS. THE AUTHOR RECALLS THE TYPE OF FERMENTATION FOR WHITE, ROSE AND RED WINES ; THEN, HE EXPLAINS THE ORIGINAL DESIGN AND OPERATION OF THE FLEXIBLE AND FLOATING HEAT EXCHANGER FOR HEATING AND CHILLING WINE IN THE VATS, BY CIRCULATION OF WATER REHEATED OR COOLED FROM A REFRIGERATION UNIT. THIS REFRIGERATION UNIT WORKS EITHER AS A CHILLING DEVICE AND AS A HEAT PUMP OR BOTH AT THE SAME TIME. THE AUTHOR ALSO BRIEFLY DESCRIBES THE UNIT ITSELF, DESIGNED TO SATISFY ALL THE REQUIREMENTS FOR HEATING AND COOLING IN THE WINE FACTORIES. J.R.
