Summary

VARIOUS ASPECTS OF CONTROLLED ATMOSPHERE AND MODIFIED ATMOSPHERE TRANSPORT AND STORAGE HAVE BEEN REVIEWED DURING THE PAST FEW YEARS. MUCH RESEARCH HAS BEEN DIRECTED TOWARD DETERMINATION OF THE OPTIMUM CONTROLLED ATMOSPHERE CONDITIONS FOR A LARGE NUMBER OF FRUITS AND VEGETABLES. BUT LESS THAN 10% OF THESE REPORTS DEALT WITH THE BIOCHEMICAL AND PHYSIOLOGICAL BASIS FOR MODIFIED ATMOSPHERE EFFECTS. GENERALLY, THE EFFECT ON REDUCING RESPIRATION RATE HAS BEEN ASSUMED TO BE THE PRIMARY REASON FOR THE BENEFICIAL EFFECTS OF CONTROLLED ATMOSPHERE. BUT THIS IS AN OVERSIMPLIFICATION. THE ARTICLE DISCUSSES THE EFFECTS OF CONTROLLED ATMOSPHERE ON EACH OF THE CAUSES OF DETERIORATION.
