FOUR APPLE VARIETIES WERE ANALYZED DURING 100 DAY STORAGE IN ATMOSPHERES CONTAINING 0.2, 0.4 AND 1% D'O2. THIS TREATMENT REDUCES THE FORMATION OF FLAVOUR VOLATILES ; THIS MAY BE DUE TO AN INHIBITION OF BIOLOGICAL OXIDATION.
