Summary

Experimental results of the mass transfer coefficient of frozen meat, meat products and offal, vapour permeability of the packing material, in the temperature range (-8/-20 deg C) are given. The weight loss due to drying of meat products and offal during storage in retail cold stores can be calculated. C.C.
