Summary

THE RESULTS OF TEST STUDIES FOR THE DETERMINATION OF BEEF SHRI NKAGE ON FREEZING ARE PRESENTED. THE DATA OBTAINED WITH A COMPUTER ARE GENERALIZED, ENABLING ONE TO PRESENT ACTUAL BEEF SHRINKAGE IN THE ROOMS BY RELATIONSHIPS BETWEEN THE INITIAL MEAT TEMPERATURE AND AIR TEMPERATURE OF THE ROOM. A MONOGRAPH IS GIVEN FOR THE DETERMINATION OF MEAT SHRINKAGE.
