STUDIES IN N. IRELAND HAVE INDICATED THAT ENZYME PRODUCTION, PARTICULARLY THAT OF LIPASE, IS INHIBITED TO A GREATER EXTENT THAN IS BACTERIAL GROWTH IN THE PRESENCE OF 30 MILLIMOLES CO2/LITRE, AND THAT GENERATION TIMES OF 4 STRAINS OF YERSINIA ENTEROCOLITICA ARE INCREASED MORE THAN 3-FOLD IN THE PRESENCE OF CO2. ALTHOUGH ADDITION OF CO2 WOULD RENDER MILK TOO ACIDIC IN FLAVOUR FOR DIRECT CONSUMPTION, ITS SUITABILITY IS SUGGESTED FOR USE WITH MANUFACTURING MILK. (DAIRY SCI.
