Summary
The catering market has become a goldmine for the industry. Even if the market is stagnating at the moment, forecasts are slightly optimistic especially for commercial catering. The penetration rate of collective catering companies should also increase. Merging and internationalization are on their way, suppliers are becoming more professional since they have to provide "tailor made" products in terms of quality and price and create product families adapted to the consumers' needs. Major catering companies are trying to establish more direct contacts with their suppliers in order to avoid the "screen" of distributors and also to negotiate quality and price directly with them, e.g., for certification. The future role of distributors remains to be seen.
