Notes how the problem of microorganisms that had previously caused great troubles in the production of soft cheese in a dairy with a traditional ventilation plant was overcome by applying principles from clean room applications. Notes how clean room technology has brought Salmonella to very low and acceptable levels in a chicken processing factory. Gives information about financial savings.
