Summary

The author firstly examines psychrotrophic micro-organisms in natural media then discusses the physiological and molecular basis of cold adaptation of psychrophilic and psychrotrophic micro-organisms. He then examines the importance of these micro-organisms in foodstuffs (spoilage and pathogenic bacteria) and lastly discusses the influence of cold on the virulence of these organisms.
