Summary

BASED ON A SEARCH THROUGH DATA COMPILED DURING THE PAST TEN YEARS, THE AUTHOR IS OF THE OPINION THAT THERE IS NEW THINKING ABOUT USING CONTROLLED ATMOSPHERES TO EXTEND THE STORAGE LIFE OF CHILLED BEEF, PORK, POULTRY AND FISH. EARLIER DATA HAS REVEALED THAT THE GAS COMPONENTS OF CONTROLLED ATMOSPHERES IMPROVE MEAT QUALITY.
