STUDY OF THE GROWTH OF CAMPYLOBACTER IN BEEF STORED UNDER VACUUM OR IN A CONTROLLED ATMOSPHERE: 80% N2 AND 20% CO2, 85% N2 AND 10% CO2 AND 5% O2. THE VIABILITY OF BACTERIA IS FOLLOWED AT 310, 293 AND 277 K (37, 20 AND 4 DEG C). THE RESULTS ARE DISCUSSED. THE ORIGINAL FLORA OF MEAT AFFECTS NEITHER THE GROWTH NOR THE VIABILITY OF CAMPYLOBACTER.
