Summary
Juice from Tarocco, Moro and Sanguinello blood oranges from Sicily was analyzed. Their stability during storage at 1-7 deg C after conditioning in glass bottles was assessed, along with the effect of precooling of oranges. A correlation between juice stability and their anthocyanin values is outlined.
