Summary
Reviewing studies on the current status of various "foods distributed frozen" and their microbial contamination showed that those foods have similar composites of the foods to "frozen foods" that are defined by law, but can almost freely change their holding temperatures. Desirable approaches to establish microbiological standards and criteria for whole food categories are under discussion, based on the international trends and theories proposed by the Codex Alimentarius Commission.
