PROTEINASE FROM STREPTOCOCCUS LACTIS IAM 1198 RETAINED ONLY 15% OF ITS ACTIVITY AGAINST CASEIN WHEN A 0.25% SOLUTION IN DISTILLED WATER WAS FREEZE-DRIED, AND ONLY 28% WHEN IT WAS FROZEN AT 243 K (-30 DEG C). PROTEINASE AT 0.25% RETAINED MORE ACTIVITY WHEN FROZEN AT 243 K OR FREEZE-DRIED IN 0.3 M SUCROSE OR SODIUM-L-GLUTAMATE SOLUTION THAN IN SOLUTIONS OF SODIUM CHLORIDE, GLUCOSE, LACTOSE OR GLYCINE AT THE SAME CONCENTRATION.
