Summary
The objectives of the study were: 1) to evaluate the relationship between the factors affecting the chemical peeling of asparagus (time, concentration and temperature) and the responses that are relevant to the process (yield and peeling quality); 2) to establish a set of optimum processing conditions for maximum yield and best peeling quality.
